- (1 lb.) Thousand Hills Ground Beef
- (1 Cup) Diced Sweet Potato
- (1/2 Cup) Black Beans, Drained
- (1/2 Cup) Diced Red Bell Pepper
- (1/4 Cup) Corn Kernels
- (1) Medium Diced Shallot
- (1) Avocado
- (1 Tbsp.) Chopped Cilantro
- (1 tsp.) Lime Juice
- (2 Tbsp.) Ground Cumin
- (2 Tbsp.) Cayenne Pepper
- (2 Tbsp.) Chili Powder
- (2 Tbsp.) Paprika
- (1 Tbsp.) Garlic Salt
- (1 Tbsp.) Pepper
- (4 Tbsp.) Olive Oil
- (4) Eggs, Fried
Dice sweet potato, red bell pepper, shallot and avocado.
Add 1 Tbsp. of olive oil to pan on medium high. Saute
sweet potato for three minutes or until slightly tender.
Stir in bell pepper and shallot, continuing to cook
on medium high for another 2-3 minutes, until all
vegetables are cooked through.
Mix in your corn and black beans, adding salt and
pepper to taste. Set mixture aside.
Cook your Thousand Hills Ground Beef in same skillet
on medium. Season meat with Cumin, Cayenne, Chili,
Paprika, Garlic salt and pepper. Stirring until brown.
Add your vegetables to the meat mixture & heat
through.Serve on dish and top with a fried egg, cilantro
and diced avocado.
